Arugula Salad with Lemon-Pepper Dressing

A fresh, simple, and healthy dish!
Ingredients:
- ¼ cup olive oil
- ¼ cup lemon juice
- 2 tsp. grated lemon peel
- ½ tsp. dried crushed red pepper
- 6 cups coarsely torn arugula
Directions:
- Whisk the first four ingredients in a large bowl
- Season with salt and pepper
- Add arugula to bowl and toss to coat
