Sauteed Kale Recipe

A low calorie, nutritious dish!

Ingredients:

  • 1 ½ lbs. young kale, stems and leaves coarsely chopped
  • 3 tbsp. olive oil
  • 2 cloves garlic, finely chopped
  • ½ cup vegetable oil, stock, or water
  • Salt and pepper
  • 2 tbsp. red wine vinegar

Directions:

  1. Heat olive oil in large saucepan over medium-high heat. Add garlic and cook until soft, but not colored
  2. Raise heat to high. Add stock & kale and toss to combine. Cover & cook for 5 min.
  3. Remove cover and continue to cook, stirring until the liquid is evaporated
  4. Season with salt & pepper to taste and add vinegar
