Sauteed Kale Recipe

A low calorie, nutritious dish!
Ingredients:
- 1 ½ lbs. young kale, stems and leaves coarsely chopped
- 3 tbsp. olive oil
- 2 cloves garlic, finely chopped
- ½ cup vegetable oil, stock, or water
- Salt and pepper
- 2 tbsp. red wine vinegar
Directions:
- Heat olive oil in large saucepan over medium-high heat. Add garlic and cook until soft, but not colored
- Raise heat to high. Add stock & kale and toss to combine. Cover & cook for 5 min.
- Remove cover and continue to cook, stirring until the liquid is evaporated
- Season with salt & pepper to taste and add vinegar
